The leg-spinner claimed the wicket of No.4 Josie Dooley, caught by Ashleigh Gardner on the edge of the circle, and finished with figures of 1-29 from six overs as Queensland were dismissed for 228.
NSW had posted 7-259 from their 50 overs after losing the toss and being sent into bat.
Gibson had previously won two interstate deciders, also taking wickets against Western Australia (1-41) in 2017-2018 and Queensland (2-14) in 2016-2017.
“This one is one that means a lot,” Gibson told the Newcastle Herald.
“I’ve spent a lot of time this season on the sidelines and coming in and out of the team and also with the Sydney Thunder [WBBL]. It’s been pretty tough on me mentally and physically so to be able to get the call up back into the team and contribute to that win means a lot.”
Nicola Carey (50, 3-39) was named player of the final.
