Police were called to the William Street hotel about 6.45pm after reports of a brawl. Officers closed the venue and moved on patrons.
A short time later a group of men returned to the premises.
Officers told them to move on when the group allegedly refused and became aggressive.
A male senior constable was allegedly struck to the head with a glass bottle and punched several times in the head by a 19-year-old man.
Two others, 22 and 24, attempted to free the 19-year-old from police. Officers used OC spray and arrested all three of the men.
The senior constable suffered minor swelling to his head but did not require hospitalisation.
The three men were taken to Raymond Terrace police station and charged with offences including fail to quit licensed premises, affray, hinder police in execution of duty and resist arrest.
The 19-year-old man was also charged with assault police and use weapon to avoid apprehension.
They received conditional bail and will face Raymond Terrace Local Court on June 6.
The alleged assault on an officer is the third similar incident in the Hunter in recent days.
A man will face court in Port Stephens on Friday charged with knocking a police officer unconscious with a metal torch.
A female paramedic was also allegedly attacked in the back of an ambulance at Mayfield earlier in the week.
A man is due to face court over that matter.
The Australian Paramedics Association's NSW president Chris Kastelan said abuse towards paramedics had become more common.
"It's just becoming like a battlefield for some paramedics to go out and treat their patients," he said.
