Four paramedic crews, police and Fire and Rescue NSW personnel were called to the intersection of Hunter Street and Steel Street just after 5pm after reports of a crash.
Paramedics treated the rider of the motorbike - a 56-year-old man - at the scene before they took him to John Hunter Hospital in a stable condition.
The man appeared to be conscious as he was being treated at the scene.
A NSW Ambulance spokesman said the man suffered a head injury but could not provide details of the severity at the time of publication.
There was heavy traffic in the area as emergency crews attend to the crash.
Steel Street, between Hunter and King streets, was closed to traffic while the scene was cleared.
The road was re-opened about 6pm.
