Knight, who has been in reserves so far this season, will wear the No.9 jersey against defending champions South Newcastle at Townson Oval on Sunday.
He scores the call up from Lantry following the suspension of Wests starting hooker and Newcastle Rebels captain Alex Langbridge.
The new Rosellas recruit also left the field early with a knee injury, which has been identified as a grade one medial strain.
This could keep Langbridge sidelined for up to a fortnight, leaving Knight to fill the void at dummy half for the undefeated leaders.
"Chris is an experienced first grade player and a really tough competitor," mentor Lantry said.
"We're looking forward to seeing him back in the top grade this week."
Elsewhere in the Rosellas' squad, forward Warren Schillings (hamstring) and 2017 Newcastle Rugby League player of the year Ryan Walker (knee) remain unavailable.
Schillings has yet to play a competition game while Walker was last in the middle for round two.
Former Cessnock captain-coach Al Lantry will again start in the back-row.
