About 8pm on Saturday, a riot erupted within the centre that required a significant and coordinated response from officers within the Northern Region.
Seven detainees were injured, including an 18 year-old who suffered stab wounds and facial injuries during the riot, which had broken out after a large group escaped from their cells, attacking and overwhelming staff.
Just before 5.30pm Monday operatives from the Tactical Operations Unit and the Public Order and Riot Squad gained access to the roof of the facility, where the remaining detainees surrendered peacefully.
Local detectives established Strike Force Mittabah to investigate the assaults and are now in the process of charging a total of 21 people (five adults and 16 youths) with riot.
The adults will appear at Gosford Local Court on Tuesday, while the youths will appear at Woy Woy Children's Court.
Youth Justice NSW will continue to lead the investigation into the circumstances surrounding the incident.
Three men continue to receive medical treatment at Gosford Hospital; one man suffered stab wounds and a collapsed lung, another suffered head and facial injuries, and the third man suffered a fractured ankle.

Police have managed to peacefully resolve a 21 hour stand off between officers and detainees at Kariong juvenile justice centre, that followed a "sudden and unprovoked" riot which had broken out overnight.
Seven detainees were injured, including an 18 year-old who suffered stab wounds and facial injuries during the riot, which had broken out after a large group escaped from their cells, attacking and overwhelming staff.
Police undertook efforts to negotiate with the detainees, nine of whom surrendered peacefully during the course of the day, police said.
Operatives from the Tactical Operations Unit and the Public Order and Riot Squad gained access to the roof of the facility just before 5.30pm Monday, where the remaining detainees surrendered.
In total 20 men and teenage boys between the ages of 16 and 20 have been arrested, police have said. They remain in custody.
Local detectives have established Strike Force Mittabah to investigate the assaults, while Youth Justice NSW will lead the investigation into the circumstances surrounding the disturbance.
