Parks at Belmont Lakeside, Blacksmiths Beachside, Swansea Lakeside, Wangi Point and Sails at Belmont reopen from Monday.
Holiday parks co-ordinator Garry Ellem said interest had been piqued after the government announced a restart date for regional tourism around NSW.
"It has been non-stop since bookings reopened," Mr Ellem said. "Wangi Point, Blacksmiths Beachside and Belmont Lakeside are already booked out for the June long weekend, and bookings for the other two sites aren't far behind."
The council has launched a campaign, Love the Lake 2020, in a bid to draw visitors to the area.
Only full-time caravanners with no fixed address have been allowed to stay in parks since COVID-19 restrictions were implemented. Mr Ellem said the closure had allowed for work to upgrade the parks.
