A development application lodged with Newcastle council shows the proposed renovation would include some structural changes, but mostly involve refurbishing the existing building.
The Lazarus family's Zenith Hotel Group bought the landmark pub late last year.
Ahead of taking control of the venue in March, group director Peter Lazarus told the Newcastle Herald that the hotel would be renovated "when the time is right".
Little more than half a year later, works are now proposed for all three levels of the venue.
Under the plans, the ground floor would be overhauled and, according to planning documents, "depart from the previous live music venue offering, and focus more heavily on the bar and dining experience".
A new first-floor deck would be built at the front of the hotel to "take advantage of the desirable ocean views" while further additions would be "concentrated to the less prominent Ridge Street car park".
