Newcastle police charged the man in December last year with three counts of sexual touching of a child aged under 10 years old.
It came after reports of a boy allegedly being sexually touched, which were referred to detectives from the State Crime Command's Child Abuse and Sex Crimes Squad.
The 57-year-old man faced four additional counts of the same charge when he faced Newcastle Local Court this week.
Police allege the man sexually touched an eight-year-old boy while working as a volunteer youth worker at a vacation care program in the Newcastle area.
The man, who cannot be named in order to protect the identity of the alleged victim, pleaded not guilty to all seven counts when he faced court on Wednesday afternoon.
Magistrate Janine Lacy adjourned the matter to Newcastle Local Court on March 3.
