WHEN the crew behind Newcastle speakeasy bar Coal and Cedar took over the Royal Crown Hotel at Dudley in 2017, they wanted to keep the pub exactly as it should be.

A family-friendly venue where everyone is welcome.
The coastal pub's history dates all the way back to 1892
It's a neighbourhood favourite in the Dudley community, and they didn't want to mess with that.
"It's slowly bringing it back to what it should be which is a family-friendly venue where you can bring the kids, and relax and have a drink," general manager Elliot Pogonoski says.
The front end of the pub didn't undergo too much change, just a fresh lick of paint and a few updated touches here and there.
Out the back, the beer garden is an enticing spot for a laidback afternoon session, with picnic tables, festoon lighting, greenery dotting the edges, and the pub's now Instagram-famous wall mural that declares: No Bad Vibes.
The latest attraction at the pub is in the restaurant, known as The Kiosk.
Executive head chef Steven Zielke recently introduced Japanese dishes to the mix, offering a menu that caters for anyone hankering for the food they enjoyed as they ate their way through Japan.
Ramen, okonomiyaki, yakitori, and sashimi - it's all there.
"Our head chef has always been very inspired by Asian food and he is trying to bring that fare to our venue," Pogonoski says.
The Japanese menu is surprisingly extensive.
Starters include chicken karaage with Japanese mayo and lemon ($15); chicken yakitori skewers ($17); and panko-crumbed chashu pork and corn croquettes with chilli lime salt ($15).
For the mains, there is 300g wagyu sirloin with mustard and miso marinade, baby broccolini, yuzu kosho mayo and lotus root ($44), okonomiyaki potato cabbage pancake with chashu pork, prawns, otafuku sauce, mayo and bonito (fish) flakes ($25); chashu pork ramen with marinated egg, charred corn, bean sprout, soy bamboo, nori and spicy miso tare ($19.50); and chicken katsu curry with steamed rice and cabbage salad ($27).
A section of the menu is dedicated to sashimi, offering Atlantic salmon, hiramasa kingfish or yellowfin tuna, all served with a pairing of tasty sides and condiments.
The launch of the Japanese menu doesn't spell the end for the pub's regular menu though.
"We still do the pub classics, like all your main meals and schnitzels, burgers, but we are trying to bring something else to the pub game," Pogonoski says.
The popular salt and pepper squid with Thai salad, tamarind vinaigrette, chilli and lime ($24) is one dish that has been brought over from the previous menu and, for those who enjoy nothing more than a big, hearty pie, the lamb and veggie one served with mash, peas and a sea of gravy ($26) is pretty unforgettable.
The mains menu has plenty of variety, including potato gnocchi with creamy vegan primavera, peas, cashews and roast zucchini ($26); Stone and Wood beer battered hoki with chips and salad ($25); and grain-fed rump steak with mash potato and steamed veggies ($27).
There are six burgers on the menu, including wagyu beef; buttermilk fried chicken; pumpkin and spinach; and chashu pork (all $15) and a vegan plant-based burger ($17), plus a kids menu (all meals $8.50).
And for the drinks?
There's a classic cocktail menu, with a little inspiration from Coal and Cedar.
"Ryan [Hawthorne], who leads the bar at Coal and Cedar, gave us a hand with the cocktail list when we first opened," Pogonoski says.
"We try to keep it a smaller cocktail range because we are a fast-paced bar. The French Martini seems to be very popular and we also do a McNulty which is a fun little cocktail with alcoholic ginger beer and a shot of Jameson whiskey, packed in with lime."
There are 10 beers on tap, and a big wine list.
Live music will return once COVID restrictions are no longer in place.
