Five years ago, the dine-in style burger joint was a relatively untapped market, according to venue manager "Locky".
A burger was something you got from the local fish and chip shop.
"The burger scene was heavily saturated in Newcastle, especially in the over-sized 'Frankenstein' burgers," Locky said.
"It would seem that this novelty is wearing off and the people are looking for simple top quality product made from fresh ingredients."
The Delany Hotel offers modern pub food using fresh ingredients and made from scratch at affordable pub prices.
"Being in the city we are a buzzing hub for everyone," Locky said.
"Our audience is pretty discerning when it comes to their burgers and their food in general, and we strive to exceed their expectations.
"Our Southwest burger and 16-hour slow cooked lamb shoulder, for examples, have a cult following."
Locky has over a decade's worth of experience in the restaurant industry, and for the last three years has been running pubs in Newcastle.
For him and the team at the Delany bistro, customer service and bold fresh flavours are the focus, and that extends to the burger experience at the Del.
"The key to a great burger is fresh ingredients, time, care, attention and creativity," he said.
"The key to a great burger joint is a great atmosphere and and an offering that is a point of difference.
"We achieve that at the Delany by listening to our customers and thinking outside the box to generate new forms of burgers."
Locky reckons that the future of burgers looks very appetising at the Delany as the market expands and new concepts come out every week.
"Our burgers continue to gain a following and we have plenty of new concepts on the horizon which will be sure to excite," he said.
The Delany Hotel is located at 134 Darby Street in Cooks Hill and is open 10am till midnight most nights, with the bistro in operation 12 noon till 3pm and 5.30pm till 10pm.
