FATHER'S Day is coming up next weekend and so here are three enjoyable Australian-made sparklers with which to toast your dad or grand-dad. Commissioned by wine distributor Single Vineyard Sellers for its Highgate label, the base wine combines chardonnay and pinot noir. The wine is pale lemon and has busy medium bubbles. The nose shows scents of strawberries and cream and the front palate brings forth crisp nashi pear characters. The middle palate introduces elements of white peach, citrus and brioche and slatey acid refreshes at the finish. It's available online at singlevineyards.com and can be found in some bottle shops and cafes and restaurants. Drink it now with chicken and pistachio terrine with cornichons, red onion jam and crisps.
