The inaugural Feast for the Senses sold out last year.
So locals are being encouraged to book early when tickets go on sale tomorrow (Friday).
The Feast for the Senses will be held on Friday, September 27, as a lead-in to the weekend's festival activities at Speers Point Park.
The Lake Macquarie cook said the three-course meal would showcase delicious, seasonal ingredients sustainably farmed and locally sourced - in keeping with the festival's core themes.
She described her menu as "authentic, spicy but not hot, and full of flavour".
"I fell in love with Indian food when I fell in love with my husband about 18 years ago," she said.
"Neville is from India and has exposed me to the real Indian food that is very different from a lot of the Indian food we see available in Australia."
There will be a touch of Bollywood at the dinner, with live Indian music and dancing, fire-twirling and roaming performers.
Mayor Kay Fraser said the atmosphere at the inaugural Feast For The Senses was "superb".
"Watching the sun set over the lake, enjoying an evening of fantastic food and entertainment - this kind of event demonstrates how we can bring our city to life at night," she said.
Tickets cost $50, which includes a three-course meal and all the evening's entertainment.
"This is a fantastic price and reflects our desire to make this event accessible to everyone in the community," Cr Fraser said.
Ms De Sousa said her menu was "plant-based" - reflecting her everyday goal of using less meat in cooking for health and sustainability reasons.
"Increasing more plant-based foods in your diet can benefit your health, save money and time, and help reduce our impact on the environment," she said.
Feast For The Senses is an over-18s event, with drinks available for purchase. The evening kicks off at 6 and will run until about 9pm.
