The 26-year-old has been a free agent since departing Korean side Incheon United in January and has been training with the Jets squad.
He has made 78 A-League appearances since his 2012 debut, 16 of which were under current Jets boss Ernie Merrick while at the Phoenix.
"Ernie has the boys playing a nice style of football, based around moving the ball quickly and getting forward, and I think it's a style I'm suited to," Appiah said.
"I'm glad to be back in Australia and am keen to put my best foot forward."
Appiah will be available for selection for the club's Round 22 clash with the Central Coast Mariners next weekend.
