The "organised chaos" of Christmas week at the Commercial Fishermen's Co-Op will go into overdrive today but manager Rob Guata is confident there is enough stock to cater for everyone despite increased demand.

Lines of socially-distanced customers stretched out the door and around the harbourside building in Wickham on Wednesday as the rush to secure seafood for the festive season ramped up.
"It's definitely up from last year, which is good, but that's just a reflection of people not getting out of town," Mr Guata said. "They're not on cruises, they're not going overseas and now with Queensland closed again demand will continue I would say.
"We're going to do about 4500-dozen oysters, somewhere in the vicinity of nine tonnes of prawns, a tonne of lobsters, half a tonne of bugs and crabs and then snapper will be about the same."
Mr Guata said there had been few issues with supply and as 90 per cent of the co-op's sales were from retail, any potential drop in visitor numbers to local restaurants or cafes due to the Sydney COVID-19 outbreak was unlikely to impact the co-op.
"We've had a few glitches with supply, Oysters in particular, but we're hoping we'll have enough this year," he said.
"We tried to get Oysters in from New Zealand for something different, but that's not going to happen with COVID. Supply has been, thankfully, OK."
Asked what was popular with customers this year, Mr Guata said "everyone" was chasing lobsters after China's recent importation ban.
"With all the media about it, everyone wants a lobster," he said. "It's been interesting but the problem with it is, we haven't been getting those WA [Western Australia] lobsters because we've got our own from our fishers.
"Everyone is expecting the price of them to be low, but it's only the WA ones that are priced lower. There's been some difficult conversations with some customers, but that's the way it is."
He said the co-op had an "express bar" if people were after a kilo of pre-packaged prawns or a dozen oysters.
"We're hoping to serve customers a lot quicker this year," he said.
The co-op is open from 6am to 2.30pm today. It will likely not reopen until Tuesday, but could open Sunday depending on stock levels.
