The 34-year-old was arrested by Lake Macquarie police on Thursday where he was charged with wound with intent to cause grievous bodily harm.
The arrest followed an intense investigation which began when police were called to a house in Wendy Street, Cardiff, about 10.45pm on Satuday.
Two men were arguing, police allege, when Mr Dempsey stabbed the other man, 29, several times before leaving.
The younger man was treated at John Hunter Hospital for multiple stab wounds and injuries which included a perforated liver.
Mr Dempsey did not apply for bail and the matter was adjourned to May 27 for mention.
