Tailor Made Fish Farms has been operating from Port Stephens for several years, distributing its barramundi throughout Australia, as well as exporting to countries such as Poland and Vietnam.
But its promotions and entertainment manager Meg McGrath told GT they had decided to open Cookabarra to take full advantage of the fresh fish and the hydroponic herbs and vegetables grown on site.
"Eventually we hope people will be able to come out and catch their own barramundi, and then have it cooked by our chef here," McGrath said.
"Also in the future, we hope to have outdoor cooking areas where people can cook their own barramundi if they want to."
Head chef Phillip Dick, who has worked as a chef all over Australian for 25 years, said the opportunity to cook with the freshest barramundi each day was a dream come true.
"Our contemporary Australian menu has a little bit of everything on it," he said.
"We have a Cookabarra barramundi - which is like your traditional fish and chips with a salad, and we also have a Thai-inspired whole grilled barramundi.
"We've also gone big on steaks as well, such as our 450-gram prime rib on the bone with a sun-dried tomato mash and blue cheese sauce."
There is also a variety of pastas and burgers on the menu.
The restaurant will be open seven days from 9am until late for breakfast, lunch and dinner.
