The female officer was confronted by the inmate in a closed room at St Heliers just after 4pm on Sunday.
She was held for about 20 minutes, Corrective Services NSW said on Tuesday, before the incident ended "without serious physical injury to the officer".
The inmate has been placed in segregation and is expected to be charged.
The state's corrections commissioner Kevin Corcoran said Corrective Services NSW was offering its "complete support" to the officer involved as well as other staff at the jail.
"I want to acknowledge the bravery of the officer, and the professionalism with which she handled the situation," Commissioner Corcoran said.
Corrective Services NSW and NSW Police are investigating the incident.
