The Fern Bay resident is the author of recipe book In Sofia’s Kitchen: Mediterranean Flavours Down Under and says it is “a real honour” to have been asked to do cooking demonstrations as a feature of the Newcastle Regional Show this weekend.
The show starts Friday and Ms Stokes will demonstrate the art of “easy-to-make healthy meals” in the exhibition centre on Saturday and Sunday
“I will be cooking four different recipes and they are all pretty much Mediterranean dishes that are quite popular and quite healthy,” she said.
“What I love about the Mediterranean diet is it’s such a healthy diet and I think people are going to be really drawn to that because people are looking to ways to eat healthy.”
Ms Stokes described her recipes as “easy to follow” with fresh ingredients “that are easily purchased at the local supermarket or market”.
“I think everybody can cook … it just takes practice, like anything,” she said.
Show president Brett Gleeson said Novocastrians can expect “spectacular” entertainment from sought-after livestock production Rooftop Express, which will headline the three-day Show.
The production is the work of horse trainer and Network Ten’s Totally Wild television program David Manchon, who has a lead role in the Australian Outback Spectacular show on the Gold Coast.
The Rooftop Express can be seen in centre ring on March 3 and 4 at 7pm and 8.30pm or March 5 at 2.45pm.
