Two people were in the sedan at the time of the accident on John Renshaw Drive, Buttai, about 8.30pm.
Police said the 1990s model Holden VN Commodore the pair were travelling in was confirmed to have been stolen from Kempsey yesterday afternoon.
The female passenger aged in her early 20s died at the scene.
The male driver was taken to John Hunter Hospital with minor injuries.
He remained in hospital under police guard late last night.
John Renshaw Drive was closed between Weakleys Drive and George Booth Drive for about an hour.
One lane was open late last night, with contraflow measures in place to direct traffic.
Police, ambulance, Rural Fire Service and Volunteer Rescue Association vehicles attended the scene.
Police investigations were continuing late last night.
