Valentine led with a goal to Chris Brown off a cut-back from Riley Russell in the 53rd minute at Cahill Oval.
Rosebud's Alex Graham was sent off for a foul tackle on Russell in the 56th minute but the visitors equalised with a quality strike from Liam Ryan in the 65th.
Valentine player-coach Adam Hughes put Valentine back in front a minute later with a header off a corner that Alex Read nodded in at the goal-line. Scott Gunster cemented three points with a solo effort in stoppage time.
Rosebud announced near kick-off that Cansdell-Sherriff was stepping down after the season because of family commitments. Technical director David Rosewarne will take over in 2021.
A long-time professional in England, Cansdell-Sherriff came to Adamstown in 2018 after first appearing in the competition as a player for Maitland in 2017.
The result on Wednesday night lifted Valentine to seven points alongside Charlestown, leaving Adamstown - the 2019 wooden spooners - on four after seven rounds.
Also Wednesday night, Newcastle Olympic beat Maitland 4-0 at Darling Street Oval in their round-five catch-up game to rise to outright third on 11 points.
Reece Papas, playing his 50th top-grade game for the club, scored twice, knocking in a second attempt at a corner in the 12th minute and a free kick in the 49th. Jared Muller scored in the 66th and Kent Harrison made it 4-0 from a tight angle in the 89th.
Olympic are a point above Maitland, Jaffas and Weston.
The victory was soured by the send-off of skipper Kyle Hodges for a second yellow card in the 87th minute.
The Adamstown announcement continues a tumultuous season for coaches in the NPL.
Damian Zane left Edgeworth on season's eve after signing for Broadmeadow in 2021, his replacement Keelan Hamilton then resigned before Lee Sterrey was announced as the club's coach for 2021.
McGuinness and Olympic parted ways also on season's eve and Joel Griffiths was recently announced as their 2021 coach.
Valentine sacked co-coach Darren Sills this month and are yet to announce a replacement for next year.
