Police were called to Donald Street about 1.30pm on Sunday after reports of a brawl.
Officers from Port Stephens-Hunter police district attended a Shoal Bay Road home a short time later, finding a 41-year-old man suffering stab wounds to his back.
They assisted the man before NSW Ambulance paramedics arrived to treat him.
The 41-year-old was flown to the John Hunter Hospital in a serious condition. Police said he was suffering collapsed lungs as well as bruising and lacerations to his head.
A search of Donald Street led officers to seize a number of items for forensic examination, and to establish a crime scene to be combed by specialists.
"As inquiries into the incident continue, police believe there are witnesses to the incident who have not yet come forward and are encouraging anyone with information, or who has dashcam footage, to contact Crime Stoppers," police said in a statement.
"Information can be provided anonymously."
Police urge anyone with information to call Crime Stoppers on 1800 333 000.
